I like them. I would agrees that flavor does pick up noticably about an inch in. It builds in strength and pepper and is cedary. Overall I like them. I've had one maduro and a few Connecticut's. I used to smoke everything on mesquite (beef) until I did this with rabbit. The nastiest tasting thing ever! Now I use mostly oak with a little hickory and/or mesquite. I should try all hickory if I can find logs.Quote:
